God’s little miracles

I spent the week with my daughter and my grandson, helping her get some much needed rest while taking care of a new born baby. I took 70 pictures during that week, as well as feeding the baby in the middle of the night, helping mom bathe him, changing his diapers and his clothes for every time he spit up. I had forgotten how exhausting having a baby can be, or maybe it is because I’m a little older than I used to be.

I still had an awesome time and enjoyed every minute with my grandson. img_3432



It has been quite awhile since my last blog post. My baby had a baby. Well, she’s a grown woman, but I still consider her my baby. He was due on my birthday, but decided to make his debut on Valentine’s day instead.  What a wonderful way to celebrate Valentine’s day by falling in love all over again. I am so blessed to have a beautiful grandson. I just cannot get enough of looking at his sweet face.

Mom was in labor for 12 long hours and it was not easy to watch her suffer through the contractions, but as soon as my grandson was born all was forgotten. Here he is, all 6 pounds 15 ounces of him. img_3375

Conversation Hearts

Now that I’m finished with school, I have more time to bake.  I’m loving it! Patriots won the Superbowl last night and I got to bake some awesome heart shaped cookies with a recipe over @Sallysbakeblog, check her out! She has some really delicious ideas.

I get to combine my two favorite loves, baking and photography. I practice both on my weekends off from work. So here is a picture of my heart shaped cookies made with royal icing. I know the title above says Conversation Hearts and that is what they are supposed to be, but I’m not so good at writing with icing. Need to practice the writing thing a little more before I go public with it. IMG_3305.jpg


Hey there thanks for following me!

I made some awesome MoonPies yesterday.  It was a rainy day yesterday so what did I do? I baked. It is the only thing I like to do on a rainy day. Sunday became my Fun day!

I have to give credit where it is due, thank you to Sally’s Baking Addiction for the awesome recipe. They turned out to be delicious and they were a hit with my boyfriend who said he would be angry with me if I took these MoonPies to work to share.

I followed Sally’s recipe to a T and added everything except for the ground cloves. I did not have any ground cloves on hand, so I conveniently left them out. Will definitely plan to make these again. img_3175


I love to travel and I always tell my boyfriend that I will go anywhere with him. He decided we needed to go on another cruise.  I think this cruise was probably number 8 for me. I’ve lost track.

Anyway, we went on the Carnival Sensation this time and it was our first time on this particular ship. It is our opinion that this ship was a training ship for new staff members. Probably because it is an old ship and it is a smaller ship. We saw more people on this ship who have never been on a cruise before. On this cruise we visited Grand Turk and Amber Cove, Dominican Republic. We had both been to Grand Turk before, but neither of us had ever been to Amber Cove.

This cruise did not start out well for us. I was sick the first two days of the cruise and all I wanted to do was sleep. It wasn’t sea sickness, I think it was an ulcer. I was under stress, we were sailing a week before Christmas, I had no money and no time to shop for Christmas presents. Well, how can I shop for presents without money? I was definitely under stress. We needed this vacation though. We have 3 dogs, we love them to death, but we were burned out. On our third day, we stopped in Grand Turk and I was feeling much better by then since i had gotten myself some Mylanta to take. Anyway, while we were in Grand Turk, I think we spent most of our time in the port just walking around to the shops. We each got a drink at Margaritaville and then headed back to the ship. My boyfriend wasn’t too impressed with Grand Turk the last time we were there. Me, I was happy just to be walking in the sunshine and enjoying the beautiful weather. Although, I wish I had a chance to take some more pictures while we were there.

On our fourth day we visited Amber Cove, the port was very similar to Grand Turk. We ended up taking a taxi to their waterfall, Damajaqua. They called it the 27 waterfalls because there are 27 different levels. We only saw the first level.  Just getting there was a trip by itself. We had to walk through several riverbeds just to get there. I had rented a pair of tennis shoes which I think was a mistake. If you want to see the waterfalls, make sure you wear a good pair of hiking or tennis shoes with soles for walking on rocks. You’ll be doing your feet a favor. I could not handle walking on the rocks. That was painful. It was torture. Anyway, I got a few pictures from there and we turned around and went back down the mountain to our waiting taxi.  The driver then took us to Puerto Plata, a city on the other side of the port where we could do a little shopping. We were also given a tour of their catholic church. I think the man who gave us the tour does it for monetary donations, either for himself or for the church. It was nice anyway.

At the end of our cruise, my boyfriend got us an earlier flight out of Miami so that we could be home in time to attend the Christmas Eve service at our church.  We went straight from the airport to the church for the service, stowing our luggage in the church office during the service. After that, my father picked us up and I took one of my parent’s cars home.

Happy New Year everyone!  What is your new years resolution? I think I’m going to work harder on starting my little baking business. Everyone says I need to open a bakery. Now that I am all finished with school, I have my little paper to hang on the wall. I’ve got degrees in English and Event Management. Now I just need to do something with the rest of my life. Baking is all I ever want to do.

To prove that point. I was going through the refrigerator cleaning out unused food when I found a carton of heavy whipping cream. It was still good, recently purchased.  I decided to bake some cream puffs so that I could use up the whipping cream before it went bad. I’ve never made cream puffs before. For a beginner, these things sure are awesome. I can’t wait to bake these again. My boyfriend wants me to make them with chocolate. And I’m at it again.  I feel like I’ve been baking and taking pictures all day long. I made these awesome melt away peppermint cookies last night and added the icing and the crushed peppermints this morning.  I took them to work for a holiday party. They must have been a hit because they’re all gone. I have to thank cookingclassy.com for the recipe. They are without a doubt delicious. Those little green piped stars are from another neat recipe over on PrettyProvidence.com these little stars are so good, you can’t have just one. Fun Times

My Famous Chocolate Chip Cookies

I bake these cookies when I’m short on time and usually bake them for people who know and love my baking. I recently baked my famous chocolate chip cookies for my mother’s birthday.  She loves my cookies, yeah she is probably my biggest fan. So anyway, since I also love taking pictures; I snapped a picture of my chocolate chip cookies with the jar. I think this would have been a great picture with a little less lighting. Unfortunately one can never really redo a moment in time exactly the way it should be. The jar of cookies has already been given to my mom. She’s happy to have the cookies and says they are delicious and I happen to agree. img_3010

Thanksgiving Day

I’m thankful for my family and for my boyfriend’s family. I’m thankful for my job. I’m thankful for everyday that I can take pictures, bake cookies and cupcakes, and I’m thankful for our dogs. Thanksgiving is my favorite holiday of the year and I love spending the time with family.

Yesterday was Thanksgiving and I spent the day with my boyfriend,  his family and their dogs. Meet Angel (the great dane), and Hokie and Ellie (the black labs). These three dogs were a riot with the great dane leaping over the other two.
